    Oven Baked Sauerkraut with Rice and Potatoes

    After yesterday’s trip to France with the wonderful home-made croissants, let’s return to our homeland and prepare something that originates from here, with sauerkraut – SOURKRAUT WITH RICE AND POTATOES. And despite the spring temperatures outside, let’s not forget that it’s still February. Here is how I prepared this delicious Bulgarian variation – the way my grandmother prepared it:

    This soup is made faster than our cold soup called Tarator, because you don’t even bother to grate the vegetables. I have been planning to try this Gaspacho for so long and in these hot days the time has come. I really wanted to make gaspacho according to an original Spanish recipe, so I looked for one and found it on the culinary youtube channel “Spain on a Fork”. The vegetables in the blender, a little good olive oil on top and you’re done! Try it for yourself! Here is the recipe:

    Today I offer you pasta with grilled vegetables – a very fresh and suitable dish for hot summer days. And a real delight for vegetables lovers! But believe me, this recipe is a temptation even for those who say they do not sit at the table without meat. Here, take a look and you will be convinced. Cut the vegetables, heat the grill and that’s it! Well, just in case, you can throw a sausage on the grill, too 😉 Enjoy! 🙂

    The recipe for roasted pumpkin is an integral part of the Bulgarian cuisine, the Bulgarian spirit and lifestyle, as well as the Bulgarian literature (remember Dushko Dobrodushkov by Elin Pelin, the archivist at the district government, who brings for signature papers to the house of the Governor…) It’s very easy to prepare, but so delicious! And now is the pumpkin season. We at home, following the strict instructions of my mom, cook it with the bark up. Thus the pumpkin is roasted very well, does not burn and does not get dry, but very soft, like a cream, the sugar syrup from the bottom of the baking pan is soaked…

    I don’t have much experience in making bread and pastries from flours other than white. I think that a different approach is needed. So when I saw a picture on Facebook of a bread, posted by our friend and cousin Anelia Shishkova, I immediately asked her for therecipe. “You eat and lose weight”, Anelia said. I’m not sure about the second, as the bread disappeared before we knew if we had lost weight. So, you should try it, too. Very tasty and mostly very quick as no special kneading is required.     Quick and very nice salad with a slight exotic flavour that comes from the roasted peanuts. You can serve it as a garnish for just about anything – for Chicken breasts steak with sausage, Baked fish in creamy lemon sauce or Jeff’s Baked baby back ribs. Bon appetit!
