    On warm days like these, or when you just don’t feel like cooking, you can simply cut some vegetables, boil them and blend them. I chose low carb because we need to follow some regime. Although, to be honest, 1 or 2 potatoes always give more density and creaminess to the dish, and sprinkling the soup with herb-flavored bread croutons is indispensable. But I assure you that the combination of onion, pepper, carrot, zucchini and cauliflower is not to be underestimated and I wholeheartedly recommend it. Sprinkle on top with white or blue cheese and enjoy! Try it yourself and have fun! 🙂

    I wonder why zucchini can never bore me. I cook them in all sorts of ways and rediscover them every time, as if I’m using a new type of vegetable. Here they are today as SMALL ZUCCHINI PANCAKES. Very tasty, light and fluffy. They are suitable as an appetizer or a side dish, as well as for a main dish in the heat. Try them and have fun! 🙂

    Now is the zucchini season and we can see them in all sorts of variants. We are used to cook them in soups, in casseroles, in moussaka, stews and mostly rolled in flour and fried (the last option I must admit that my family really likes it). However, in this zucchini recipe, the taste is not inferior to what we are used to. And it should be noted that prepared with low-carb ingredients, they are extremely light and suitable for a regime to follow in the warm summer days. Here is the recipe:

    This seemingly very simple recipe is so delicious that it’s hard to describe. It was born on a day when my family were guests at Jeff’s. Jeff’s wife (i.e. my friend Maya) doesn’t eat meat, so we always cook something vegetarian. We opened the refrigerator door and unanimously decided to deprive Jeff of the peppers he makes an omelette with. We mixed the ingredients for the filling and this tasty and beautiful thing turned out! Look how it happened: You should definitely prepare them and you’ll understand!
