Parfait with sour cream and dark and white chocolate
I have loved parfait since I was a child. It seemed like a super exquisite dessert to me then, especially after I found out that it comes from French and is spelled PARFAIT (something like Peugeot;) )… I remember once with my grandmother Anastasia, after whom I was named, we bought different types of sweets, including a pink strawberry parfait, from a pastry shop at the entrance to South Park on Nishava Street in Sofia (after it was a bank, now it’s a pastry shop again). So the other day, after we tried the parfait, Grandma, as a high self-respecting chef cook, especially in the preparation of typical Bulgarian banitsa…

Chopped “fried” salad with roasted peppers and beans
Of all the delicacies, I love beans and roasted red peppers the most. And both together – you get a dish just to lick your fingers. This is a salad recipe (maybe an appetizer) and I present it to you the way mom prepares it. The idea is not just to mix roasted peppers with boiled beans. There are some tricks that make it far tastier – first chop and then “fry” with hot oil. Try it and you will see what I am talking about… Here is the recipe:

Easter bread
Come on, roll up our sleeves and make this EASTER BREAD! It is unexpectedly delicious and remains very soft even the next day. In addition, it is also a traditional part of the festive Easter table. This bread is served on the Easter table with the colored eggs on top. In many parts of the country, small dumplings with an egg in the middle are prepared from the same dough and given to children. I saw the recipe in an amazing book that takes us back to the cuisine of our ancestors. The book is by Penka Mihova “When the Soul Eats”. Happy Easter holidays! 🙂

Traditional Easter sweet bread (Kozunak) – the best I’ve ever made
There is a sea of recipes for Kozunak. I decided to share this one because it really is the best one I have ever made. With crunchy crust on top and soft and with “threads” on the inside. Sweet enough and super fragrant! And making it with the mixer dough attachments made things a lot easier. Thanks to pamscookingworld.blogspot.com for the recipe! You should try it, too! It is not difficult! Happy Easter holidays! 🙂

Easter cruffins in muffin moulds
Easter is approaching. We all “train” actively to choose the most appropriate recipe for Kozunak. However, I am going to offer you something different that we can do with this sweet type of dough – CRUFFINS. The word comes from the combination of “croissant” and “muffins” and that’s how we get these beauties. I saw the idea from the recipe for “Easter Kraffin” from a Russian culinary site by Tanya Shpilko. She prepares them in larger paper forms. I decided to bake them in muffin molds. They turned out great! Diversify the traditional Easter cake with these delicious CRUFFINS and I guarantee you that you will not go wrong! Happy Holidays!

Crepe cake
Crepe cake with cream, chocolate and strawberries and sparkling strawberry wine – a delicious way to say “I love you” to a loved one on Valentine’s day. You can prepare the crepes, the cream, and the cake itself before the special day and keep it refrigerated until serving.

Roasted pumpkin (bark up)
The recipe for roasted pumpkin is an integral part of the Bulgarian cuisine, the Bulgarian spirit and lifestyle, as well as the Bulgarian literature (remember Dushko Dobrodushkov by Elin Pelin, the archivist at the district government, who brings for signature papers to the house of the Governor…) It’s very easy to prepare, but so delicious! And now is the pumpkin season. We at home, following the strict instructions of my mom, cook it with the bark up. Thus the pumpkin is roasted very well, does not burn and does not get dry, but very soft, like a cream, the sugar syrup from the bottom of the baking pan is soaked…

Mince pie (traditional English Christmas cake)
Here’s an idea for your Christmas table – Mince pie. For the first time I heard about it from the best English teacher – my daughter’s teacher – Miss Maria Angelova. Ever since I was told this thing exists and how delicious it was, it has been on my recipes waiting list. But I knew I would make it for Christmas, because then it is its time. Because of the meaning of “mince”, my first surprise was that it’s a sweet pie. Probably the stuffing of a variety of fruits and nuts is so reminiscent of minced meat that I guess that’s where the name tag comes from. Thanks also…

Oven backed mackerel with tomatoes
Today I am giving you an idea for a fish recipe for the occasion of the coming Saint Nicholas Day. It is not the traditional stuffed carp, but it is traditionally Bulgarian and incredibly delicious. And fast;) I wish you a nice and happy holiday to everyone – both all the celebrating with these beautiful names and the people around who love them! 🙂
