    Here is another Saturday temptation –  in Italian way with the most delicious Bolognese and Béchamel sauce as in the wonderful lasagna, and in our Bulgarian way – to use whatever pasta we have in the cupboard. Let’s not forget the delicious yellow crust on top. And you want – sprinkled on top with Parmesan… Well, here are my LASAGNA BOLOGNESE WITH MACARONI. Later I found out that in Greece it is called PASTICIO, and in Italy – Pasta Pasticciata. But no matter how they call it – it’s delicious, I guarantee you!     Puff pastry has saved me more than once when I have to make something for breakfast. That’s why I almost always have at least one package in the fridge.     Today I offer you pasta with grilled vegetables – a very fresh and suitable dish for hot summer days. And a real delight for vegetables lovers!     Fast spaghetti Marinara

    Marinara sauce is a tomato sauce, usually made with tomatoes, garlic, onions and other spices – basil, oregano, parsley, pepperoncini, capers, anchovies and more. It is a slowly cooked sauce (through simmering for about 2 hours or more), similar to bolognese sauce (ragu). This recipe is fast. The fast Marinara sauce is less aromatic but still very delicious. My personal favorite addition to Marinara sauce is the Bulgarian white cheese. Any other cheese can be added to this sauce.

    Improvized focaccia with olives and rosemary (with Street mekitsi dough)

    Hello, dear cooking friends! I had forgotten about this bread because it was improvised – as a “leftover” product of the Street mekitsi dough. The dough was quite a lot, and there weren’t that many people to feed at home, so I left some of the dough for the mekitsi in the fridge. In the afternoon, I rolled it lightly in a greased pan and baked it with olives and rosemary. Similar to Focaccia Italian recipes. You can see the recipe for Street Mekitsi Dough HERE.
