Low carb cream soup
On warm days like these, or when you just don’t feel like cooking, you can simply cut some vegetables, boil them and blend them. I chose low carb because we need to follow some regime. Although, to be honest, 1 or 2 potatoes always give more density and creaminess to the dish, and sprinkling the soup with herb-flavored bread croutons is indispensable. But I assure you that the combination of onion, pepper, carrot, zucchini and cauliflower is not to be underestimated and I wholeheartedly recommend it. Sprinkle on top with white or blue cheese and enjoy! Try it yourself and have fun! 🙂

Traditional Spanish gaspacho (or Gaspacho Andaluz)
This soup is made faster than our cold soup called Tarator, because you don’t even bother to grate the vegetables. I have been planning to try this Gaspacho for so long and in these hot days the time has come. I really wanted to make gaspacho according to an original Spanish recipe, so I looked for one and found it on the culinary youtube channel “Spain on a Fork”. Red lentils soup
This year I rediscovered red lentils – cooking takes even less time than cutting vegetables. If you haven’t tried it yet, you should definitely do it! I soon learned about red lentils bread and I will definitely make it these days! So, expect a recipe 🙂 And here is the recipe for the soup, although the “recipe” in this case is a big word. Lamb Head Soup
This is the first of three recipes with lamb I will present to you these days before St. George’s Day. This recipe is my mom’s. I don’t know if you’ve ever cooked a lamb’s head before. It’s even surprising how much meat there is in it. My husband loves them baked and so far I have cooked them this way. But one day my mom came to visit and cooked this soup. It tasted great!
