Turkish cheesy buns – recipe

In a bowl put the yeast, the sugar and 2 tablespoons of the flour.

Warm the milk to a nice body temperature and add to the bowl, stirring well.

Let the yeast to rise for about 15 minutes in a warm place.

To mix the dough I used a kitchen robot with the dough mixer attachment, but you can knead the dough by hand.

Prepare the additional ingredients for the dough. Put aside one egg yolk in a bowl. Separately melt the butter and mix it with the sunflower oil.

While stirring, add the eggs without the previously separated egg yolk.

Add the salt.

As you don't stop stirring, add gradually to a thin stream the sunflower oil, mixed with the melted butter.

Again gradually add the flour.

It would be better if you do not to add more flour. You will obtain a very soft and relatively greasy dough. What is interesting here is that it is very easy to operate with.

Divide the whole dough into three approximately equal balls.

Divide each ball into 10 equal pieces. From the whole dough you will get 30 balls.

Take a small ball of dough in your hand, flatten it slightly and put in the centre about 1 tsp. of cheese.

Close the ball by making a ridge on the upper side and trying to give it an oval shape.

Put them with the ridge down in the tray, which you already covered with a baking paper or a teflon pad. Be sure to leave a space between them. To give the traditional Turkish look, press them with a fork not too hard, leaving traces.

Dilute the remained egg yolk with 1-2 tablespoons of water and grease the cheesies.

Bake in a preheated oven at about 190 degrees for about 15-20 minutes, until the cheesies get a nice golden tan.

You get incredibly delicious cheesies, suitable for all occasions. Bon appetit!
